The underdog of the classic Texas-style BBQ tray is the smoked hot link (at least in our opinion!). Smoky with just the right amount of kick, hot links, or hot guts, are usually made with beef or a combination of beef and pork and served with a side of bread and pickles. While there's a ton of variation from pitmaster to pitmaster, this classic version has the perfect blend of pork and beef and classic smoky spices.

It's all very well to say I used this spice blend for this recipe but, what is in the blendis what matters to those of us who want to make sausages.A breakdown of ingredients is why I watch these videos. I, like most who do watch them, have a good grasp on the process, it's the flavour and its recipe that is what is critical for me. I have made 15 kg 33 lb of different flavour style recipes. They are fun to make and delicious to eat.

That's a really good looking sausage. They turned out great. I think they'd be perfect on a bun, with some caramelized onions. Cheers! 👍👍✌️

Could you use venison instead of beef? Would you still use the beef broth?

Can you help me out. I did this recipe 25lb batch. I opted to use the maple cure instead of cure #1 and it is crazy salty. I thought the cure was good with any of your seasonings. What did I do wrong?
