If I may suggest, blend the 2 limes together with the rest, you get all the citrusy oils from the peel, and you're straining it anyway

I somehow managed to make alcohol by accident. I made ginger beer wort and added ginger bug liquid to it, then bottled my ginger beer. I added apple and lime juice to the remaining ginger beer wort to try to make a ginger bug version of this video’s drink in addition to that.

But, my ginger beer It didn’t ferment very much, while the Apple+lime+ginger was fermenting an insane amount despite being in a larger vessel with significantly more headspace (since I was just making it with the leftovers I didn’t make enough to fill the entire vessel, so there was much more empty space inside). Came very close to exploding, and tastes of alcohol now that it’s finally settled down.

I think putting it all in the same container and ladling it into bottles over time let it have time to settle or something, so the last thing I bottled happened to have most of the ginger bug liquid = most of the yeast + additional sugars from the apple and lime juices.

In summary, probably add ginger bug to each bottle instead of combing all ingredients and *then* bottling to ensure it’s mixed properly. Unless you wanna risk a potential explosion from accidentally making cider.

This is great. When you burp the bottle twice a day (I'm from the tropics), how do you know when the desired carbonation is met?

You hv to drink from it right, to taste. How much days on average would that be generally? 2, 3?

Try the apple variety boskop from germany very sour good for baked apple and in my opinion for juice

Why you're straining the pulp out? Will it affect the fermentation or is it just preference?

Ahh, for some reason I thought you were going to use the microorganisms that like on the ginger skin to ferment it. This looks really great!!!!

Does it produce any alcohol in the fermentation process? I got a little over 8 years sober, so I try to avoid anything with alcohol in it.
