I'm a personal chef. I use salt rocks to cook all the time. I get them piping hot in the oven and then bring them out and let the clients at the table cook thinly sliced pieces of meat.

If you aren't cleaning your block, you may as well be using a stone or something. Salt blocks are meant to interact with the food and sealing it off with old food would stop that. Imparting some of the flavors from the block to the meat is a primary reason to go through the hassle of preheating and all that which goes with salt block cooking.

Cooking on the salt block will minimize it but not completely eliminate that taste. The primary reason why you steak tastes that way is because of the way most beef is aged (wet-aged, wet-packed or cryo-vac'ed are common terms). That method of aging produces acids as the primary by products. Those undesirable acids are primarily responsible for a more "serum-y", "bloody" or "organ-y" taste.

Hi, I wanted your help as I used my salt stone for first time and I screwed up my meat. The temperature was too low so it got well done (puag!)So my question is, how do you warm up the stone to get it to the right temperature?I did warm mine in the oven. Then I cooked the meat on the stone while was on high fire on my gas stove. Yet the rock wasn't hot enough so, first how can you measure the temperature and second, how long it takes to get there, in case you have no way to measure the temperature (which I don't of course).Thank you for your attention and keep up the great work!

Is that what is considered medium rare now? Interesting.. I wash my salt block after each use, but before I do when i finish searing and cooking my meat I finish what ever veggies I'm going to cook as well on the salt block. The taste is sensational.

I'm not a fan of actually cooking it on the salt block, I found that just a generous seasoning of a quality salt makes it taste the same, but the block looks aesthetically unattractive to keep and store overtime. I really only like the benefits for raw food.

The whole idea of using a Salt Block for cooking is based upon people who were living in tents or huts trying to keep the fire stoked with wood throughout the entire day.  The block just gave them a surface to cook.  You have to get the block heated even before you turn up the flames (Water will Explode from within).  The people left the block on the fire because it won't burn.  That's the only reason.  Grill a Steak ??  I'd rather do it the old and tried and true method we've always known - on the Grill not the plate.

I love comments from steak idiots... "Ewww... bloody raw!" LOL the ONLY part of the steak that needs to be grilled is the outside. This is not hamburger. The inside of the steak is never exposed to the elements. Only the outside needs to be cooked to kill any bacteria. Rare is NOT raw. Rare is warmed. Or, even if it IS raw, so what? Ever hear of Steak Tartare? The best meat is never cooked more than medium rare. If you prefer your meat medium or well done just eat hamburgers. Always cooked thru and thru, for your safety. Check out "Black and Blue". Burned at 800 degrees on the outside and still raw on the inside. My kinda steak!

I agree that is more to the rare side, medium rare is pushing it. it's not going to make you sick to eat steak that rare though.
