I actually watched for your technique in cooking the rice, and it was excellent. Your recipe looks tasty also. I like the visual descriptions you give because it helps to understand the texture the dish should have. I'm making a shrimp and chorizo paella and had no idea of the water to rice ratio. This was exactly what I needed to know, as there were no instructions on the container. Thank you

I tried this with garlic and shrimp belachan as aromatics and lemon instead of wine. Mushrooms added. Fish bullion cube stock.

That's how I do my risotto. Just gotta make sure that the liquids obsorbs and cooks into the rice giving it that softness instead of that crunchiness.

We could make it a rice cassrole with mixed veggies & chicken topped with mozarella
We could add bacon, hotdog or pepperoni
And it would be great side dish with chicken breast or steak
