My Homemade Slow Cooker Chicken Casserole Recipe

A warming delicious slow-cooked chicken casserole with fall-apart meat, lovely veggies and a seasoned creamy sauce. Most of the work is done in the slow cooker, so you can look forward to a hearty family dinner when you get home from work.

Serve it with mashed potato to soak up that delicious sauce. The king of comfort food.

Ingredients for the Chicken Casserole:
2 tbsp vegetable oil
8 boneless chicken thighs - trimmed of fat
2 tbsp unsalted butter
2 brown onions - peeled and diced
3 cloves garlic - peeled and minced
3 tbsp plain/all-purpose flour
1 tsp salt
1 tsp black pepper
1 tsp dried thyme
½ tsp celery salt
2 cups (480ml) chicken stock
1 tbsp freshly squeezed lemon juice
16-20 baby chestnut mushrooms
16-20 chantenay carrots
3 sticks celery - roughly chopped
1/4 cup (60ml) double (heavy) cream
Small bunch parsley – chopped

With the cost of food rising substantially, I didn’t want another chicken dish made in the slow cooker tasting just okay. So, I followed this recipe. IT WAS THE BEST CHICKEN DISH I’VE HAD ALL YEAR AND WAS EASY AS CAN BE TO MAKE! Seriously, I’ve kept a small “tasting bowl” going and it feeds my soul. THANK YOU!

Ok, I will confess, I never review YouTube now. I made this Chicken Casserole tonight, and it is a keeper. Its the ultimate cold weather comfort food. I pretty much followed the recipe , but as its an adult household I added a half cup of white wine to the sauce gravy...
Half an hour before I served it I added a 12 ounce bag of frozen green peas and let them heat in the sauce. I found that my slow cooker had done its job at around 3 hours and 15 minutes. Any longer and everything would have been overcooked. I served it over garlic mashed potatoes along with green beans in a shallow bowl to catch that gravy. It was perfect and we each had seconds. Its tasty hearty and filling. My kind of meal.

I think we've all made a million crockpot recipes and they all taste the same. This was amazing. I made this last night and it was incredible. I cut up chicken breasts into thigh-size filets and it fell apart beautifully when done. It was the most tender chicken I ever had in a crockpot. I added baby potatoes and used about 8 -10 cloves of garlic - we can't get enough garlic in out household :). I tripped the celery stalks, used whole carrots rough chopped and seasoning as directed. I wasn't sure how busy my day was so I made as directed so it started on high for an hour then switched to low for 5 more hours. Dish was incredible. I think the results were fantastic not only because of the perfect blend of seasonings (yes common but just the right portions) but also did not use a non-stick pan so all the caramelized bits from the chicken and onions blended together in an incredible, 5 star restaurant rue. Fantastic dish. Family couldn't stop raving about it. Thank you!

I love this recipe because I always have most of the ingredients needed in my cupboard so I only go and buy fresh chicken and veggies. It normally last us for 2 days so one day we eat it with mash potato and the other day with rice and it tastes delicious.

Great recipe! I especially appreciate the non dump and go method, so much flavor is added by just browning the chicken and the 15 minutes it takes to create the sauce. That’s cooking with love, the secret ingredient 😃😃

Making this today, i bought a crockpot express on amazon, used the saute option to brown the onions and chicken. Literally no clean up. Currently on the slow cooker option. Thank you once again for a lovely, easy to follow video recipe.
