How to Grow Shiitake Mushrooms (Recipe Included!)

Shiitake mushrooms are my FAVORITE. The flavor is so rich and complex, but they're often extremely expensive at the grocery store. So I figured I'd grow some of my own and cook them up for you guys!

Keep in mind this is a partial grow guide...to grow from "scratch" you'd need to create your own substrate and inoculate it with spores, let the spores develop shiitake mycelium, and THEN you'd get to this step in the process. But for the first shiitake video, I kept it simple and practical and went with a hardwood sawdust kit from Fungi Perfecti.

SHIITAKE MUSHROOM RECIPE

70% olive oil
15% sesame oil
10% tamari or soy
5% white wine
pinch of black pepper
1-2 cloves of crushed garlic

Cut stems off, marinate in mixture, and bake uncovered at 350° for 30-40 minutes. Enjoy!

Love it. Mushrooms are the most overlooked crop in most gardens, and it's crazy because the fungal mycelium ties everything together, balances soil chemistry, retains moisture, helps plants communicate with each other via chemical defense, etc. And they are SO delicious. I have King stropharia in my woodchips, and I can't wait to expand them all over the place. Those winecaps with some eggs are amazing. I am certainly going to try the Stamets recipe next season. Stamets is one of the people who got me so interested in gardening sustainably/permaculture style. What a human treasure that man is. Thanks Epic Gardening.

I have a friend who LOVES mushrooms, ( as for me not so much) and she used to Garden in another state, now living hear which we can garden year round she would Love to learn how to do it, I'm sending your video to her for I LOVE all your other Gardening videos I've learned so much from you stated with lettuce about 5 years ago, and now I grow Cabbage, Collard Greens, Peppers, Herbs and of course Tomatoes and Pineapples, even now in December because it's Florida, also my love of Gardening has also started my sons (young Men) to also LOVE the Art of Gardening. I love drying mushrooms. Shiitake is a great choice as it's highest in guanylic acid compared to other mushrooms. Combine with dried citrus, tomato paste, soy sauce, white miso and kombu in a veg broth and you got yourself an umami bomb perfect for stews

Very informative! I just wanted to add that, for the water treatment, some states use Chloramine instead of Chlorine, and the off-gassing method actually won't work with eliminating it. A safer bet would be to use a Chlorine/Chloramine water conditioner which can be found easily at local pet stores.

I could easily listen to Paul talk about mycology all day long! This looks like a fun(gi) project that I'll have to try myself!!

FYI: the fungi projects I've completed in the past have always yielded much larger mushrooms in the 2nd flush as compared to the first. They were of a different variety so I can't say for sure whether or not that holds true for Shiitake, too.

I've done them with WBS and hardwood sawdust bags, only colonizing them until bark forms which was less than 3 weeks, cold-shock only overnight in plain tap water and gotten some really good yields in terms of b/a. I think a lot of the prep and precautions are overkill. This process can be greatly expedited.

I'm not a refrigeration engineer but I think you might find your refrigerator works better if you don't leave it open for three days.

What humidity dome? You left the most important info out. Where to grow, in the dark, in sunlight, indoors, outside, in a closet?

A character on Star Trek Discovery (a mycelium expert) was named after Paul Stamets! Kind of exciting to see the real world connection!

Im surprised at how expensive you said shiitake mushrooms were there. Here in Canada, I pay a lot less, although they are still one of the more expensive ones. Growing mushrooms looks fun, and I think I’d like to try it when my kids are a bit older and can experience it with me.

The chloramine in water wont volatilize like the chlorine. Some humic acid (or any organic acid) will bind it though. Just enough to change the water color is perfect. I collect rain water to do this.

Just wanted to say that your subscriber and view figures don't match your content - these are some of the best videos I have seen on YouTube in regards to gardening!
