Yield 3oz of sauce

Ingredients:

3 Tablespoons lemon juice
7 Tablespoons Salted butter
1 Tablespoon chopped parsley
Salt and Pepper to taste
Sugar to taste (if sauce is too acidic)

Did you really cook the lemon juice enough reduce by half without it turning bitter af? Also, how did you get that consistancy with no type of emulsifiers? Plain old skill, magick, or corn starch?

This is my third time trying this sauce. I cannot get it to emulsify!!! Any tips? At first i thought it was the butter wasn't cold enough so i put it in the freezer before trying to make the sauce then i thought my pan was too hot so im trying it on the Lowest heat possible and still nothing. Does the size of the pan matter?
