Salmon with Lemon Butter Caper Sauce
Ingredients:
8oz Salmon
2 Tbsp Shallot (finely diced)
2 Tbsp Garlic (minced)
1/2 Cup White Wine
1/2 Lemon (juiced)
1/4 Cup Heavy Cream
1/8 Cup Fresh Parsley (finely chopped)
1-2 Tbsp Capers (without brine)
2-3 Tbsp Olive Oil (+1 Tbsp for salmon)
3-4 Tbsp Butter
1/2 Tsp Garlic Powder
1/2 Tsp Onion Powder
Salt and Black Pepper
*Place salmon on a baking sheet lined with parchment paper. Season with olive oil, garlic powder, onion powder, salt, pepper, and a squeeze of lemon.
*Bake salmon in the oven set to 350 degrees Fahrenheit for about 15-20 minutes until the internal temperature reaches 140 degrees Fahrenheit. (Cooked Medium)
*While salmon is baking, in a medium size pan on medium heat, add olive oil, shallots , and garlic. Cook until translucent.
*Add white wine and reduce by 1/2. Next add lemon juice, heavy cream, and capers. Cook for 5 minutes.
*Add salt and pepper to taste. Turn off the heat and gently melt in butter. Finally add chopped parsley right at the end.
*Serve salmon with lemon butter caper sauce on top and a side of jasmine rice and broccolini.
