Learn how to make lemon curd with my easy, 5-ingredient! This creamy and zesty lemon filling is great as a cake filling, tart filling or for cupcakes, cookies, cheesecakes, and macarons!

Mix 2 eggs, 4 egg yolks and 1 cup white granulated sugar with a whisk for 3-4 minutes.
Pour mixture into stainless steel saucepan and whisk in 2/3 cup freshly squeezed lemon juice.
Stir over medium heat with a rubber spatula for 3-4 minutes until it thickens.
Take off the heat and add 1/2 cup unsalted butter and 1 teaspoon vanilla extract. Optional: add lemon zest.
Strain the lemon curd with a fine sieve.
Allow to cool and transfer to sealed glass jars. Can be stored in the fridge for up to 2 weeks.

Yours is the simplest recipe!! Everyone else makes such a fuss of it! I literally just whisked all the ingredients in a bowl, got it on the gas, then when warm I added the butter, whisked whisked whisked….done. 10/10 ❤️

First off, your hair is BEAUTIFUL!! 😍And super helpful recipe! I appreciate that you get straight to the point but also take the time to explain why you do certain things such as the part about using a stainless steel pot. I'm making my own birthday cake this year and I plan to use this recipe for an additional filling in the cake, wish me luck!!

I made a half recipe up with this and instead of sugar I used Xylo sweetener, which I blended up in the blender like a powdered sugar so that it would dissolve real easily. I also used a metal bowl that fit right inside of my Kettle with boiling water in the bottom of the kettle not touching the bowl so as not to have lumps. I think because of the Xylo I had to cook it about three times longer to get it thick. I also added just a little more butter 🧈😋. You really have to taste you in the a.m. to make sure it's sweet enough with the Xylo as I was very cautious and didn't put the full half amount at first and of course it depends on how sour your lemons are too.
Thank you Tatiana for your wonderful inspiration and someday I'll try making the cheesecake as well using Xylo sweetener. 😊

I used it to make cheese cake and it’s Literally the best Lemon curd I’ve had in my life so lemony I used lemons fresh off our tree ( I did not add vanilla ) ❤❤❤ this alone made me sub, like, save, share you name it!

This recipe is not only easy but tastes fantastic! I gave some to a friend and he ate the entire jar in a day! I don't recommend that but he said it was irresistible. Thank you. Next. Macarons!

So she said that she doesn’t like the texture of lemon zest but what I learned is that you can add the lemon zest and leave it to sit while you stir in the butter and then you strain it to get the lemon zest and it becomes beautiful and still smooth, but then it has that extra pop of lemony Flavor 😊

I just tried your recipe and it’s amazing. I didn’t have unsalted butter so I used salted but it still tasted great nonetheless
