These two loaves were baked 14 days after creating the new sourdough starter. The waste not want recipe not is a great way of using up sourdough discard. Considering the starter was only 14 days old the sourdough loaf turned out pretty well too! Full starter tutorial coming very soon.

Is there a way to make small sourdough breads in a small oven without the use of a dutch oven? I've kept alive a sourdough for almost two years but never baked an actual loaf cause I'm afraid it will not work

Ok, after 30 days of daily feeding for a strong starter how can I go for a weekly feeding (same 20/20/20g?) and after having a mature starter how long can it go without feeding, kept in the fridge?

Also, if a feed only the scraps (5g/20/20g) and I’m not going to bake soon, can i put this directly in the fridge or does it have to stay fermenting outside first?

I can't "see" the difference between the "old" starter vs the new starter. I have been using my "old" starter for many months and am thrilled with the results. What should we expect with this new starter?

I only have access to plain flour, my starter is established and I want to bake but unsure if I'll get good results as I don't have bread flour.

You do not need to do discards - Keep it in the fridge.
