I ordered lasagna soup at a local restaurant once. It was just a soup of the day, nothing they have regularly. I’m pretty sure it was just broken up Chef Boyardee Ravioli and maybe some V8. Honestly, 8/10. I’ve actually don’t it myself since that visit and it works… But maybe I’m weird…

This looks fantastic! Question- I prefer the traditional Italian style of bechamel versus Americanized version of ricotta. Would there be a way to swirl in a bechamel or other smooth flavored and textured white milky cheese mixture at the end, rather than a dallop of ricotta? Just curious because that would put it over the top for me.
