If you make them like this, they will dry very quickly and start to crack. You need lard or something greasy to make them pliable. You will also have trouble wrapping a burrito if you use only flour and water.

Let me tell you the things we add to processed tortillas are mostly for machinability, I didn't add any preservatives but if we don't add those additives those tortillas will crack even before going into a pack

You have to eat them while still warm if you make them like this as they go stale very quickly. If you want to keep them you have to use some fat. I've used olive oil, sunflower oil, and butter and they all work fine. My favourite was sunflower oil. Also wrap them, a tea towel works great for this.

you can add spices in the flour and mix before the water that is what i ususally do its quite yummy

I have done homemade tortillas recently and I must say, this changes so much the flavor of the taco, it is infinitely better than I expected, and it takes just a bit of time, so if you have let's say 20 extra minutes, I recommend

Same simple recipe for scallions pancakes. For flatbread add some yeast and olive oil...cook on hot ungreased pan 1 min on each side. And this is the same recipe for Italian calzone!
