LOTUS BISCOFF CHEESECAKE (no bake) .
Lotus biscoff lover, here is a Treat for you. As you noticed , I am obsessed with cheesecake & Biscoff spread. Why not bring them together? A creamy cheesecake , with lotus & digestive biscuits base, yummy lotus spread in filling, melted spread on top & finish off with crumbs. All in all utterly scrumptious.

🌸Ingredients;
.
Mascarpone cheese; 500g
Cream cheese: 500g
Double cream/ fresh cream: 400ml
Condensed milk : 350 ml
Or powdered sugar: 300g
Biscoff spread: 200g
Gelatine: 2 tbsp
Water : 4 tbsp for gelatine

Base;
Digestive biscuits: 300g
Lotus biscuits: 100g
Butter: 175 g
.

Biscoff spread for topping: 50 g
.
NOTE;
you don’t have mascarpone cheese, you can use same amount cream cheese like 1000g , cream cheese all together.

NOTE;;;
I used 16 small 2 inches rings & 3 of 4 inches tins for all batter.
From these small 2 inches pan is hard to take out. I recommend to freeze for 1 hour. Then i will easily slide up.
You can make 12 inches springform baking tin size cheesecake with this batter.
Half the quantity and use the batter in 7 & half or 8 inches tin.
