America's test kitchens has had a long-standing recipe for whipped potatoes, and I very often do the exact same thing, or I roast ahead of garlic, and when I heat up the dairy and the butter with the salt and pepper, I add in that garlic paste, and then with that into the potatoes. I haven't added Parmesan cheese to it, but I have added fresh thyme to the potatoes during the last 30 seconds or so, and the potatoes and hot dairy get wit with the whisk attachment on a stand mixer. Hands down, they are the best mashed potatoes I've ever made. So this is very close. I imagine the Parmesan would be out of this world delicious. But I actually prefer to separate the garlic cloves and peel them, then drizzle with oil over a sheet of foil, then fold it up and roast it. I've never been able to get the garlic to squeeze neatly out of their paper skins after roasting.
