American (+ a couple other countries') eggs are weird in that they're washed straight away and then have to be refrigerated because the washing can take off a layer of protection from microorganisms. European food/ag administrations tend to just vaccinate their chickens against salmonella and don't need to be refrigerated (but should probably still be washed). There are different methods in different places, too, it just depends on their policies and how much they can give toward it. Either way, cook your eggs properly!
