・6 oz (170g) Cooked rice
・1 Egg
・2 slices of Ham
・1 oz (30g) Minced green onion
・1 tbsp Oil
・A pinch of Salt and pepper
・A pinch of White pepper
・A pinch of MSG (optional)

Cha-han soup
・1.8 cups (450ml) Water
・1 tbsp Sake
・2 tsp Soy sauce
・2 tsp Oil (Any type of oil is fine.)
・1.5 tsp Oyster sauce
・2/3 tsp Chicken stock powder
・A pinch of White pepper
・A pinch of MSG (optional)
・Sliced green onion for topping

Harusame salad (Glass noodle salad)
・1.7 oz (50g) Dried glass noodles
・3.5 oz (100g) Cucumber
・1.4 oz (40g) Crab sticks
・1 Egg
・1/2 tsp Oil
・1 tbsp Rice vinegar
・1 tbsp Soy sauce
・1 tbsp Sesame oil
・1 tbsp Sugar
・1/2 tsp Chicken stock powder
・1 tsp White sesame seeds

Ingredients (for 2 servings)
Kabocha croquette
・5 oz (140g) Kabocha squash
・2.5 oz (70g) Pork fillet (Any part/kind of meat is fine.)
・2 oz (60g) Onion
・1 tsp Butter
・1 tsp Oil
・A pinch of Salt and pepper
・1 tsp Sake
・1 tsp Soy sauce
・1/2 tsp Sugar
・1/3 tsp Chicken stock powder
・Black pepper (as much as you want)

・3 tbsp Flour (for batter)
・3 tbsp Water (for batter)
・Panko
・Oil for frying
・Tonkatsu sauce

Miso soup
・1.7 cups (400ml) Water
・2 tbsp Miso paste
・1/2 tsp Dashi powder
・2 oz (60g) Eggplant
・1 oz (30g) Onion

If you have arthritis like me, zap the kabocha in the microwave for 30 seconds. Let rest a minute. Then zap 30 more minutes. Be careful because it can explode if too much pressure builds up. This makes it easier to cut.

We also have Golden Curry here in California. That is what I usually use when I make Japanese curry dishes. That's what we are having for dinner tonight actually!

I've heard using a bone cleaver makes chopping hard shelled veggies easier. I used one for an acorn squash my self.

Char the eggplant or fry it with little oil till it becomes soft inside, crispy, smoky outside. Now fry some minced onion, green chilli in oil till they become soft. Now mix all of these with fork and use salt. Try it with steamy white rice!

I am doing a full week of Japanese food and so far it’s delicious. Just to let you know, in your meat and potato stew you have onions listed twice and cabbage which you don’t put in the stew. Shiso leaves are practically impossible to get in England which is a shame. Thank you for your recipes.

Very interesting video. I've never cooked Asian food before . I currently try to watch as much as I can before trying some dishes . So a visit to the Asian supermarket is in order to buy the bare minimum for sauces . I guess I also need miso ....that's going to be quite adventurous for me, I'm French with a Spanish mother so my cooking is Mediterranean..😊 thanks for the video
