Or Paimon was enchanted by Lumine to not tell any useful information till Aether has completed different parts of his journey. because Remember Lumine has already done this journey 500 years prior to Aether, so maybe Paimon was sent by Lumine to guide Aether but not tell him anything outside of what he discovers for himself and lets him draw his own conclusions about the world, his journey, each situation & decisions.
