The kelp/konbu is natural MSG. Thats a large part of why its used to make dashi

Looks wonderful. The hardest part of this recipe is navigating the asian store and finding these powders and the noodles amongs a 1000 other similar looking products all with labels that are not in english heh.

I avoid MSG & most salt when cooking because I have kidney disease. I also have to limit the amount of protein I use (only 100 gm per day). I know decreasing the salt in a recipe changes its flavor but I would rather have a little flat-tasting food than have my kidneys fail; sorry Uncle Roger.

Marion- I love your recipes because I love Thai, Japanese, & Chinese food, & now I can make my favorite dishes at home while adjusting their salt content according to my diet. I would still love for you to make Mee Grob. Please consider doing so. Thanks.

I love udon noodles and always buy the frozen ones. Thank you for sharing the tips about dashi packets - I didn’t know and took pics of the packages for when I head to the local Asian market.
