High Protein Patty Melt

We’ve been conditioned to believe dieting is supposed to be hard, it’s supposed to create suffering
That’s what makes recipes like this feel truly magic
Recipes like this bring joy back to the process. Without joy in the process, the purpose is entirely lost
This is one of those recipes that genuinely tastes so ridiculously good - you’ll actively be questioning the macros and calories while eating it. That, to me, is a positive experience unlike any other
This recipe is the definition of “Stealth Health”

High Protein Caramelized Onions:
3 diced yellow onions
1 tbsp butter
16oz beef bone broth
Dash of soy sauce (optional)
Method:
- Cook onions over medium-high heat until all water has evaporated and they begin to brown/stick to pan (Do not add any salt)
- Deglaze with ~4oz of beef bone broth at a time, stir and boil until liquid is completely reduced, and repeat until you’ve fully reduced 16oz of bone broth into the onions
- Add a splash of soy sauce for extra flavor + color
Burger:
6oz 93% beef
Salt, pepper, garlic
~1 tbsp caramelized onions
Burger sauce:
25g light mayo
20g sugar free ketchup
1/2 tsp sweet relish
~1 tbsp caramelized onions
Salt, garlic & pepper to taste
2 slices of bread
I used low carb bread (H-E-B brand, 30 cal slice)
1/2 tbsp butter to toast
Top with an additional 1-2 tablespoons of caramelized onions
Notes:
- The caramelized onion recipe makes enough for ~3 burgers. You can also easily double the recipe and store in an airtight container for later use/as an ingredient prep. They will thicken due to the collagen content in the bone broth, but will reconstitute once reheated 🤌
- Use any bread of choice - I used a low carb bread here simply to allow more room for fat calories
