My family is Spanish so I grew up on paella. The closest I’ve found is using Viggo Yellow Rice. It has saffron which is a key ingredient. Add what you want to it. Shrimp, chicken, beef ribs, blackeye peas, etc.

As good as this looks & is probably quicker, adding chicken thighs browning them first & adding chicken stock to cook the rice in. I would add clams, scallopsleft over cooked fish
