3 large eggs at room temperature
½ cup (100g) powdered erythritol
½ teaspoon (2g) salt
¾ cup (180mL) full fat coconut milk
½ cup (115g) melted unsalted butter
½ teaspoon (2mL) vanilla extract
1 ½ cups (150g) unsweetened desiccated coconut

I just made this yesterday and it was so good. My mother used to make these but with commercial condensed milk. So easy to make. Since I don't have a sweet tooth, I used 1/3 cup monkfruit + 1-2 TBS cinnamon powder instead of the 1/2 powdered erythritol. I eat these with sour cream and so delicious!
