I always whisk by hand in a steel bowl, on a pan of hot water. But yeah, I can imagine a thermomixer might work here as well 😂

As a former chef..in New Orleans..(now a plumber) I made hollandaise every morning by hand..never used one of these or even heard of a kitchen having one..and then him weighing the wine..never done that just a splash or so maybe a bit more for a bigger batch..and we always used red pepper for a better flavor and color..this is a way to do this but not “like a chef” ..real chefs rarely measure unless you are baking.

Chefs use a bowl and a whisk . I used to to do 4kg of hollandaise you whisk until your shoulders fall apart 😂
