As italian, just for sure. There isn't a strict law about how to make pizza. If a restaurant wants to make a pizza with clams, cheddar and carrots it can do, but probably it will fail

I am writing from Italy.
This is not true, often use eletrical ovens too.
The main difference is how we made the dough and most of all the premium ingredients we use that come from our wonderful land and our special artisans.
In a few words, a superior know-how got by centuries of experience and best row materials made the italian pizza unsurpassable.

I visited Italy last year from UK. I can tell you that the quality is night and day. I went to a simple bakery and their pizza absolutely blew me away.

The temperature in which you bake the pizza is what makes the difference.
For a Napolitana pizza you need at least 450 degrees celcius regardless if it's an electric oven or wood burn one.

We don’t use cheese, we use MOZZARELLA DI BUFALA and we only use selected products that make the pizza light (as it should be) and delicious. we don't only have the margherita pizza as I read in these comments. I have nothing against American pizza, but the real pizza is the Italian one and if you happen to come to Italy I recommend you go to Naples to eat it ❤️

Even in Italy they use the electric oven. The real difference is in the dough which has the characteristic texture (if made properly of course) and it is not a simple bread base on which you put random stuff. And the ingredients of course which can be varied but never ever any kind of sweet fruit or sweets in general (and never chicken also).

In italy we do have many different ways of making pizza. It all depends the region. Theres thin, high, amd very high... Ir all depends

No. Just wrong. Italy invented, created and developed pizza. NYC style pizza is just standard pizza that has been partially repropriated as if it’s their own creation.
Having been to Italy many times, every country in the world tries to make their own. It’s not an American product.

America does use wood fire ovens too. It just depends where you go. Yes, quick fast food chains like Pizza Hut don't use wood fire ovens.
From what I heard there is a huge difference depending on the type of water you use for your dough as well.

Well actually there are a lot of variations of how you make a pizza in Italy, it’s a stereotype that we have strict rules for that. Also, rules are made to be destroyed, but with a reason. Y’all would be really surprised to find out how many pizza variations there are in Italy.

Its right but the "forno a legna"(wood oven) that are often use in italy don't give any smoked taste because all the smoked is properly aspired they use wood oven so the dough can cook fast and properly giving at the same time a touch of crispy outside and very soft inside.
In any case wood oven are now forbidden if you want to open a new business by european law ( the existing one remains legal) so new restaurant use gas oven which simulates perfectly the wood oven cooking times.

NYC pizza is basically what you find in gas stations in Italy or like in a fastfood chain called "Spizzico" that I don't even know if it still exists. It's decent pizza, but can't compare to top Italian pizzas.

Well. I am Italian expert and I can tell you Italian pizza is healthier they use fresh mozzarella and tomato sauce not fermented one and their pizzas are floppy so it fits easy in your mouth
