It's oil from the cheese actually. The issue here is baking temperature and time. This happens when it's baked for too long and for moderate temperature.

The woodfire oven pizzas will usually be cooked fast on high temperature not letting the cheese separate from it's oils. Cheese has it's fats that separate if you bake like that.

But dense dough takes longer to bake.

I used to enjoy eating Pizza Hut, Domino's, or Papa John's, even Little Caesars, but they no longer taste good and make me sick after, so I've begun making my own. I even make the sauce (sometimes with fresh tomatoes, other times canned) but I also add other veggies to the sauce and I swear, you could eat my sauce by itself, it tastes that good. I'm currently trying to grow my own tomatoes, herbs, and other veggies so I can make the sauce completely fresh. Homemade pizza for the win!

There is a difference between Italian pizzas and American pizzas. Italy has less oil on pizza, on the other hand, america has more oil on pizza, mainly becuase of the cheese.
