Hello and Happy Juneteenth my Friends, welcome to my Southern Kitchen!

Today I am making a refreshing Pie that is full of fresh flavors and ingredients, Strawberry Pie! Crisp, bursting with fresh and bright strawberries, natural flavors and ingredients and the best part, this dessert is No Bake so no oven required! Perfect to serve for your Juneteenth celebration also the whole Summer; at BBQ Cookouts, Fish Frys, and Crawfish Boils! Everyone will love and enjoy this.

1 quart (2 pints, 2 pounds) fresh strawberries, rinced, tops removed, and hulled
1 (9-inch) pie crust, baked (homemade, refrigerated, or frozen thawed deep-dish
1 cup white sugar
1 tablespoon freshly squeezed lemon juice
1 1/2 teaspoons pure strawberry extract
3 tablespoons cornstarch
3/4 cup water
Whipped cream, for garnish

For the Pie Crust: If using a refrigerated or frozen thawed crust, bake it according to the package instructions.

To bake my homemade Pie Crust: Preheat oven to 325 degrees. Fit a piece of aluminum foil to cover the inside of the pie shell completely. Fill the pie shell up to the edges with pie weights or dried beans (about 2 pounds) and place it in the oven. Bake for about 40 minutes.

Arrange half of the strawberries in the baked pie crust then place the remaining strawberries in a medium saucepan and turn the heat to medium-high. Add in the sugar and lemon juice to the strawberries and bring to a boil, stirring frequently. In a small bowl, whisk together the cornstarch and water then gradually pour and stir the cornstarch mixture into the boiling strawberry mixture. Reduce the heat to simmer and cook until thickened, about 10 minutes, stirring constantly. Remove from the heat and add and stir in the strawberry extract then mash the strawberries using a potato masher. Pour the cooked strawberry mixture over the strawberries in the pie crust. Place the pie in the refrigerator and let it chilled overnight until set. The next day, pipe the sides with whipped cream using a 1M or 365 star piping tip and add a strawberry on top (if desired). Cut into desired slices, serve and enjoy!
