Have a meal prep day and freeze what you can't eat right now! That's what I do when I get carried away at the farmer's market. You could also look into freeze drying or dehydrating veggies. I don't know about Germany but in the states it's relatively easy to find affordable appliances secondhand. I got an old $50 dehydrator to make mushroom jerky, and it's one of my favorite purchases ever.

Edit because 1) apparently it's BLASPHEMY to suggest people meal prep to avoid wasting hard to obtain produce or enjoy it over a longer period of time. All kinds of people make and freeze meals, and those meals often contain vegetables. If you don't want to try it you don't have to, no need to argue with a with a **suggestion, ** lol.

2) Mushroom jerky! It's really easy, but the jerkifying process is going to depend on whether you use a dehydrator or an oven.

I like to use porcini, button, or baby bellas. Clean them, cut off the bottom half-ish of the stem (it can be woody/grainy), slice them lengthwise about a half to a quarter inch thick, let sit in your favorite marinade for a few hours (I usually use a store bought teriyaki sauce that I love), pull them out and assemble in a single layer on a roasting rack of some sort (I just use a cooling rack over a sheet pan) and let them drip or pat off the excess sauce. If you're using an oven, just make sure to rinse the marinade off of your sheet pan before it goes in.

In the dehydrator: set to 150° F (I think that's 65° C?) and let them go for a few hours (I do 4) following any other directions for the dehydrator. Mine says to rotate trays halfway through.

If your oven temp goes low enough or has a warming option you can follow the same steps you would for the dehydrator. If your oven doesn't go that low, set it as low as it WILL go and experiment. An oven thermometer is a cheap and handy tool to help with this.

They're done when they've reduced in size between 25-50% but are still pliable, just like jerky. Have fun!

I would laugh, but when I moved to a different country for my studies, I literally travelled 2 hours away to get my familiar veggies cuz veg was incredibly expensive otherwise.
And I'd come back with 2 trolleys of them, anf stick them in one _giant_ bin in the kitchen.
I get it. I get it. 😂😂
