I was raised by the cheapest little old Greek lady who lived thru the depression & was one of seven kids.
I can pinch a penny until it's copper wire lol.
So many of these meals remind me of the stuff I make when we are broke (always).
Once while I was out on medical leave from a job, we went 45 days with absolutely no income whatsoever.
Thank fuck for food banks & knowing how to make something from almost nothing.
Also: I love mush foods. In my house, we call them GRUEL. nice. Lol

Oh! Here’s an idea. What if you did a budget eats, but instead of shopping you have a weeks worth of meal delivery kits like Hello Fresh or Chefs Plate or whatever! June never gets to see the recipe cards or what the kit was supposed to make. Just pre portioned ingredients! I’d love to see what she comes up with and how far she can stretch it.

Cups: Get yourself some silicone cupcake pans and you can make these cups my molding them INSIDE the cup and the silicone makes it easier to remove it. The bean cups that didn’t work, turn into powder again and use it to thicken soup in the future
