I put my chicken on a rack and just put salt and pepper on it as that drains the fat away. In the uk we peel the potatoes and par boil until the outside is fluffy. We never really add spices. We do like roast parsnips too. I roast beetroot too if doing beef. Lemon is nice to squeeze over at the last minute or added to a stock cube and flour to thicken.

We tend not to use tinned peas with a roast but we use frozen.

If you have a roast again I recommend sage and onion stuffing. You'll be able to find that on BBC too. Made me want a roast now.

Hi, Tami ! Great video ! I've never ever heard of or seen anyone putting spices on a chicken. Mostly in the UK & certainly in Scotland, we just rub butter all over it, to crisp up the skin. Have you heard of sage & onion stuffing to go with it ? And also which is a must, is white pudding or as we say it in Scotland, mealy pudding. Have you heard of those ! Both equally delicious & part of a traditional roast, here in the UK/Scotland.

Hi there. I'm from England and love roast dinners. I was brought up on chicken roast dinners and beef dinners. Yorkshire puddings were originally/traditionally eaten as a starter. This was especially so during the second world war. People would eat the Yorkshire puddings with gravy first in case the air raid siren went off. This was to ensure that they'd  had something to fill them up if they were in the air raid shelter all night. I'm loving your videos. Many Thanks.

I use the cup method for Yorkshire pudding batter so one cup of flour, one cup of eggs and I use half a cup of milk and half water.

The Yorkshire looked good, you used the right amount of oil, and heated it up first, that's important! We don't season our chicken for a roast in the uk usually, we just put a bit of salt and oil on it. We also usually boil the carrots, and do the potatoes separately in just a bit of oil, and just let them roast in oil so they go very crispy. Some people par boil them first.... that means half boiling them so they're just a little bit cooked. I think a lot of people just use the instant gravy granules too these days. I don't know anyone that uses canned peas, frozen is the most popular here xx

Great Yorkshire puddings. A couple tips, if you didn't already know. Always use equal measures of eggs, milk and flour i.e. one full cup of milk, one cup full cup of flour and one full cup of eggs (very simple) and never open the oven door until ready to take out or they will not rise :)

We fans from UK are flying to the US for Traditional Sunday Lunch at yours. Looks delicious You can actually cheat with the Yorkshire Puddings by using Aunt Bessies Frozen Yorkshire Puddings which you defrost then cook in the oven. Chris M UK

Was the - i think the spices/herbs you added are great. chicken dry? You did not say anything about the weight of the bird - but 2 hours 40 minutes seemed a bit long to me. I have roasted hundreds of chicken and hope it was ok. David from London

A very interesting away to cook a chicken, as a earlier comment says, in England we cook our chicken breast up, I would say in general most people cook it that way in England,  sometimes we put bacon over the whole chicken to self baste you can use the bacon as an extra when eating lunch/dinner or you can have it straight off the chicken and make a hot bacon sandwich.

I've never rinsed my meat off either. Can you use white pepper instead of black pepper? Could you have put more batter in the cup cake pan? Did the person you watched make the pudding use all the batter they had? The meal looks great.
