Vegan Zucchini Fritters | Recipe ⬇️

Ingredients:
* 2 medium-sized zucchinis, grated
* 1 small onion, sliced
* 2 cloves of garlic, minced
* 1/2 cup chickpea flour, or more if needed
* Season to taste
* Olive oil for frying

Instructions:
* Grate zucchinis and let them sit in a colander with salt for 10 minutes to remove excess moisture. Squeeze out the liquid.
* In a large bowl, combine grated zucchini, sliced onion, minced garlic, chickpea flour, and season to taste. Mix well.
* Heat olive oil in a skillet over medium heat. Spoon 2 tablespoons of the zucchini mixture into the skillet for each fritter. Flatten slightly.
* Cook for 3-4 minutes on each side until golden brown.
* Transfer fritters to a paper towel-lined plate to remove excess oil.
* Serve warm with tzatziki sauce on top. Enjoy!
