Zucchini Fritters (vegetarian & vegan)

⭐️ Make them with or without eggs and serve them as a starter, side dish, or main dish with our marinara sauce, sour cream, or tzatziki sauce. We are sure you'll love them!

⭐️ Ingredients
2 pounds zucchini (about 4 medium)
1½ teaspoons salt
1 egg or ⅓ cup or 50 g chickpea flour + ¼ cup or 60 g of water
1 red onion
2 cloves garlic
1 teaspoon dried oregano
¾ cup all-purpose flour
2 teaspoons baking powder
½ teaspoon black pepper
2 tablespoons extra virgin olive oil or more if needed

SERVE WITH
tzatziki sauce
marinara sauce
cashew sour cream

Metric:
900 g zucchini (about 4 medium)

110 grams all-purpose flour
2 teaspoons baking powder

im 11 years old and just cooked this all by myself! unfortunately we didnt have that sauce or marinara, but we used siracha and ranch! delcious!

It is a Turkish origin meal which we called "Mücver". I know it is your twist and it looks good and yummy. Good job. 👏👍in case someone is interested what Mucver is, you google and search. We usually use "green onions" instead of onions, I add a lot of Dill, and I also like to add a bit of parsley, but no garlic in it. It is already added to the cacik ( tzatziki). Yumm.❤😋

I did this with chokos because I ended up with a bigger harvest than I expected. People don’t even know what Chokos are so I have nobody to share them with. Anyway they taste and behave just like zucchini. The bonus for me is that it’s fee and organic 😃

I just made these for me and my brother! They came out softer than I thought they’d be so maybe I’ll stick them in the air fryer or oven for a couple extra minutes to firm up. Otherwise super simple and delicious! Thanks

Don't waste EVOO for frying though, just use normal OO as the EV is cold-pressed for a reason!

I've been making this for a while, with a twist. I added a grated carrot (sweetness), course ground pepper and Sriracha seasoning for added heat. Really nice.
