Master Sushi Chef Hiroyuki Terada is one of the top Japanese Chefs in the entire world and the most popular Japanese chef on YouTube.

At age 10, Terada learned the basics of sushi from his father and then went on to attend RKC Chef's School in Kochi, Japan from 1987-1989. He soon earned a nickname for his fast knife, attention to detail, divine presentation and ability to create new dishes and accents based on traditional Japanese cuisine. After graduating RKC Chef School, he was called to serve under Master Chef Kondo at Yuzuan restaurant in Kochi, Japan from 1989-1992. Mr. Kondo is the master of Kansai style cooking, considered to be the high-end of Japanese cuisine. Chef Hiroyuki Terada is using the Minonokuni Matsu-1573 210mm Yanagi. Super Blue Steel. Can also be used for breaking down whole fish and chickens. But normally for slicing, sashimi, vegetables, meat etc.. This is Chef Hiro's custom specked knife.

Yeah, hand shredding vs. sliced shrimp just looks so much more visually appealing. As Guga says, you first eat your food with your eyes.

❤❤😋Just got up and saw this AMAZING VIDEO! Saikou desu and Kirei desu nei! Smoky Kewpie is a game changer. I am going to make this and use the smoky mayo too.! Hiro you really are the GOAT ( greatest of all time) of sushi! Hiro San, What do you think about volcano style and torch at the top?

I'll never understand on places like Costco getting looked at in a bad light people act like their freezers aren't full of food from Walmart, Kroger, Publix, Sam's club, most restaurants out side of a Michelin star restaurants get their sea food from the same place as the chain stores and they all get it from the Either the Pacific, Atlantic, Indian or Artic Ocean and farms, just like Hiro says always inspect the food smell it, look at it and if anything seems off don't consume it ....

While sushi chefs in Japan tend to stick to sashimi/nigiri/gunkan/temaki and similar kinds of sushi that are much simpler (meaning less ingredients), I think sushi chefs that make sushi rolls have more fun and creativity because you get to experiment with many ingredients and really you can do anything you want. I personally think that when the quality of the fish/seafood isn't the best (due to availability), sushi rolls are really a great way to make good sushi. I love watching this channel for the variety of sushi rolls Hiro makes. Its very interesting and entertaining. Cheers!
