The prices are absolutely true. But Peter Luger today is not the same as it was years ago. I was a regular until 2009, and when I went back recently with friends, I could already feel the difference. Luger’s uses USDA prime whereas many of your standard low end steakhouses will serve select, choice, or worse… They will not even disclose the grade of beef. Also at many fine dining establishments that serve prime:, when you order your steak cooked to well you’re probably not getting the cut or grade of beef that is promised on the menu because you wouldn’t be able to taste the difference. I managed to high in French restaurant and saw this in the kitchens, and Anthony Bourdain even talked about it in an interview on Oprah. Restaurants can make money with all those “well done“ customers by saving the better beef for rare to mid-rare people yet charge well done requests (with substitute beef) the USDA prime prices.
