Oven Roasted Baba Ganoush is a simple and healthy spread that is so full of flavor. It may be your new favorite way to eat eggplant!

✅Ingredients

• 1 large eggplant
• 1 teaspoon salt, divided
• 1 head garlic
• 1 tablespoon olive oil
• 1 lemon, juiced (about 1/4 cup)
• 1/4 cup tahini paste
• 2 tablespoons freshly chopped parsley

✅Instructions

00:00:19 - How to roast eggplant

1️⃣ 00:00:13 - Preheat an oven to 400 degrees F. Lightly grease a baking sheet.

2️⃣ 00:00:19 - While the oven is preheating, slice eggplant in half lengthwise. Use a fork to poke a few dozen holes on the skin side of the eggplant. Sprinkle flesh with 1/2 teaspoon salt and let sweat 10 minutes. Rinse and pat dry. Place eggplant flesh side down on prepared baking sheet.

3️⃣ 00:01:16 - Cut the tip of the garlic off to expose cloves inside. Place garlic onto a square of aluminum foil. Drizzle a little of the olive oil over the exposed garlic cloves and wrap tightly with foil. Place garlic on the sheet pan with the eggplant. Drizzle remaining olive oil over eggplant.

4️⃣ 00:01:59 - Roast in the preheated oven for 30 to 40 minutes until eggplant is tender.

5️⃣ 00:02:05 - Use a large spoon to scoop the flesh from the eggplant and place in a food processor. Gently squeeze garlic cloves out of their peels and into the food processor.

6️⃣ 00:02:22 - Add in lemon juice, tahini paste, and remaining 1/2 teaspoon salt. Puree until smooth.

7️⃣ 00:03:00 - Transfer to a bowl and refrigerate 2 hours before serving.

8️⃣ 00:03:04 - Sprinkle with parsley to serve and drizzle on additional olive oil, if desired. Serve with pita chips or pita bread.

Well done yet you missed the yogurt this is the key element side by the Tahini try it and let me know this is the original recipe 😁yet if you are vegan then use a soya yogurt instead 😉

we called it mtabal in syria, baba ghanosh we add tomato pepper and some parsely

Oven temp is 205°C, top bottom heat I guess. I prefer to mix everything by hand rather then in the blender, you have some structure left - but take care of the Tahini - it must be smooth as in the video, otherwise you have pieces of Tahini in the BBG and they are rather bitter.

That looks like more than 1/2tsp of salt you're dumping in there. Is it in fact 1/2 tsp

I think to much tahini! Tahini is a strong sesame flavor. U have to taste the oven roasten eggplant to.
