Italian Tomato Sauce. Tomato sauce day also known as “sugo” day is the most important and special day to my family. This sauce is what I use in every single one of my recipes and the most requested tutorial over the years. Gathering and making sauce to last us a year is a tradition that I hold so close to my heart. This Italian sauce making tradition, has been a tradition for generations. Steve and his family are from Cardinale, Calabria and have been making sauce this way for decades. His uncle (zio) Iginio is from Trento, Italy and he also made sauce this exact way as well. This is by far the most incredible sauce which we use for soups, stews, and use as a base when we make pasta with meatballs, with ribs, cutlets, and many other recipes. Traditions are extremely important to me and in Bulgaria we have many that we follow. We have been preserving and canning food for as long as I can remember. In Bulgaria, we never had any fancy machines like we do today, so we always did everything by hand. We would make jam, string bean soup in jars, pickled veggies, fruit compote, vegetable spreads, and so much more. Tradition means everything to me, and I hope I can inspire you. 3 bushels of Roma Tomatoes – or San Marzano
basil for each jar
salt to taste – some families leave out the salt completely
45 wide mouth one litre mason jars
wide mouth rings and round lids

My Mom always ran the tomatoes through twice as to not miss any of the tomato pulp and flavor.

Why do you turn your tomatoes upside down? Can't that mess up the jar later on when you turn it back over to stock them in your stockpile? The whole reason to leave them right side up as for them to seal correctly or am I wrong?

i grew up in italy and we would make our own tomatoe sauce every year or two, sometimes with a community of people, sometimes just my family... it's the best tomatoe sauce on earth! i still make my own short version when i make pasta.

What a great machine ! I just blanched raw fruit to get the peel off then cut them in half to empty the seed pulp out...then cook down. I had to do this for my families digestive issues. People have no idea what crap manufactures put in retail products...and legally call it "natural" cause our government allows it.

This is what I love about Italian cuisine. A few simple ingredients that are allowed to shine. Good quality tomatoes have such a depth of flavor! All they need is a little bit of salt to bring it out and some fresh basil to provide another layer of complexity. Nothing to hide behind if the ingredients are subpar.

I used to do this with my granny and mom. My job was to wash the tomatoes but I had to help remove skins by hand as we didn't have a machine like yours. Good times!

I miss these days. I no longer have access to good tomatoes to do this. Nor do I have a basement to store the 250 pounds I used to make. 😞 I miss this delicious tradition.

You can make tomatoe oil with the skins too. Its just red oil but it is really ncie for garnishing. The colour is really stong in the skins.

Beautiful sauce I know growing them and canning them are a lot of work but it's so worth it to have something you made yourself to sustain your family that is better than anything you could buy bravo viva homegrown and homemade
