Hello again folks, hope you all had a fab weekend. Got a Sunday roast play list recipe for you today, and that's my roast leg of lamb with anchovies, garlic and rosemary.
Now some of you are probably sitting there thinking 'what the heck is he doing putting fish with meat!?' and I can tell you I had that same thought before I tried it. What happens is those anchovy fillets melt through the lamb, adding a mild almost barbecue flavour to the meat, and it loses it's intense fishy flavour. You still know it's anchovy, but it just works so well with the leg of lamb.
You can cook it either pink, or slow cook for a long time. If you cook it for longer, the anchovies go even further into the meat for a much more subtle flavour. Serve this up with some roast potatoes, veg, and some gravy made from the juices, wine and stock from the pan, and you'll have a cracking dinner.

To make my roast leg of lamb with anchovies, garlic and rosemary you will need:
►Half leg of lamb
►About 6-8 anchovy fillets in oil
►About 3 garlic cloves
►2-3 sprigs of rosemary
►2-3 medium onions peeled & roughly chopped
►3 sticks of celery
►3 bay leaves
►1 large glass of red wine
►About 200ml of chicken stock
►3-2 medium sized carrots roughly chopped
►Rapeseed oil
►Salt & pepper
