What's the best cooking oil for deep-fat frying? - If there is such a thing...

With so many different types of oil available, choosing the best oil for deep-frying can be a bit overwhelming. Also, there are so many other factors you need to consider when it comes to deep-frying oil.

The first and the most important thing you need to check is the smoke point of the oil.

According to Wikipedia, The smoke point, also referred to as the burning point, is the temperature at which an oil or fat begins to produce a continuous bluish smoke that becomes clearly visible, dependent upon specific and defined conditions.

That means the oil you choose needs to be able to withstand a very high temperature that is required for deep frying.

As most deep-fried dishes require temperature around 375 degrees Fahrenheit, which is 190 degrees in Celsius, then the smoke point of the oil needs to be slightly higher than that.

Here are some of the best cooking oils that are good for deep frying and can handle the high temperature very well:

• Refined Peanut Oil
• Refined Coconut Oil
• Refined Avocado Oil
• Refined Sunflower Oil
• Refined Soybean Oil
• Refined Vegetable Oil blend
• Refined Safflower Oil
• Refined Canola Oil
• Refined Corn Oil
• Refined Extra Light Olive Oil

Now, all of these oils are good for deep frying. However, what you also need to consider now are the taste and the cost of the oil. And which oil is the healthiest?

The two healthiest oils for deep frying on that list are Avocado Oil and Extra light Olive Oil. Don't confuse the last one with extra virgin olive oil, which has a low smoke point and is not that good for high-temperature cooking.

Avocado oil contains both, monounsaturated and polyunsaturated fats, but it has more Monounsaturated fats, and it is very stable at high temperatures.

Extra light Olive Oil is also very heat-resistant and filled with monounsaturated fat. As per one study, Extra light Olive Oil could be continuously deep-fried for more than 24 hours without it breaking down. Therefore, making it a good choice for deep frying various food.

Although these oils are slightly healthier then the other oils on the list, but they are also the most expensive. When filling a large fryer or a pot with oil, the cost can add up very fast. Also, the taste of these oils is not the most subtle, so you might not like the taste of the food cooked in these oils.

So, instead, I would recommend going for peanut oil or sunflower oil when deep frying. These oils are quire cheap and have the most natural taste. Peanut oil and sunflower oil are also very stable at high temperatures.

But are these oil healthy, you might ask?

I'll be honest with you, if you're deep-frying food, you're not going to find any really healthy oils anyway. Yes, some might be slightly healthier than others, but the difference is neglectable. If health is your biggest primary concern, then you probably shouldn't be deep frying anyway.

The only thing you need to consider is the smoke point of the oil. Once you get that right, then the oil is good to go, that, of course, if you like its taste.

I've heard several people saying tallow and butter, but supposedly those have too low a smoke point (including lard) for deep frying, though ghee has a higher smoke point. I supposed the question is whether or not the taste is worth the smoke? Of course turning the good oil into bad oil by getting it too hot wouldn't be healthy, but then, there may not be a healthy way of frying :P It might be worth the purchase of ghee to use for deep frying, then strain it and store it afterward to be reused as a butter and general purpose cooking grease/oil (if you like ghee).
