Collard Green with Smoked Turkey Neck

If you’re a fan of meaty collard greens like I am, keep the recipe as is! But if you prefer less, go for 1 lb of smoked meat to 2 lbs of greens. Perfect balance for every taste!

Ingredients:

6 brunch or 2lbs fresh collard greens, washed and trimmed
2 lb smoked turkey or pork neck
1 large onion, chopped
10 cloves garlic, minced
1 green bell pepper, diced
8 cups chicken stock or broth (preferably low sodium)
2 1/2 tbsp apple cider vinegar
2 tbsp pure brown sugar
2 tbsp all-purpose seasoning
2 tbsp old bay seasoning
2 tbsp onion powder
2 tbsp garlic powder
1 tbsp better than bouillion chicken base
1 tsp black pepper
4 tbsp butter
1 tsp smoked paprika
1 tsp crushed red pepper flakes (optional, for a kick)
Salt to taste

Instructions:
• Remove the tough ribs from the greens and roughly chop the leaves into ribbons or small pieces.
• In a large bowl, add cold water, a pinch of salt, and a splash of distilled vinegar. Wash the greens thoroughly until the water runs clear, and the greens are free of grit and dirt.
• In a large, deep, heavy-bottomed pot, heat a bit of oil over medium heat. Add the onion and bell pepper, cooking until soft, translucent, and fragrant, about 5 minutes. Add the garlic and cook for 30 seconds.
• Place the smoked turkey necks into the pot along with the chicken stock or broth onion powder and garlic powder. Bring to a boil, then reduce the heat to low. Cover and cook for 1 hour.
• Gradually add the chopped collard greens to the pot, stirring as they wilt down. Season with smoked paprika, brown sugar, all-purpose seasoning, Old Bay, black pepper, red pepper flakes, chicken base, and salt (to taste, if desired).
• Cover and simmer for about 1.5 hours until the greens are tender and the turkey meat is falling off the bone. Stir occasionally, adding more stock if needed.
• Once done, remove the turkey necks, shred the meat, and return it to the pot. Stir in cold butter until melted, and finish with a splash of apple cider vinegar to brighten the flavors and bring it all together.
