We have a friend, who works at a food bank. Where stores donate food, to help those in need. Sadly, they often end up having to toss out food that's expiring, or about to expire, because not enough people are taking advantage of the benefits available to them. Instead of tossing this 10# tube of ground beef in the trash, they dropped it off to us. We didn't have much time before it expired, and there's no way we can use 10# of ground beef in the course of a week. So we did one of our favorite quick easy meals, and turned it all into Taco Meat, and pressure canned it. Now we have a quick easy snack for the winter, when we don't feel like cooking. Pop open a can, toss in a pan and warming up, add some tortillas, cheese, salsa and you're no longer hungry!

You should rotate your rag when wiping the rims of the canning jars. Watch your clip and basically it added to the next jar and was wiped on. It's a small detail sometimes overlooked. Love your channel and watch all videos !! Love ya

I have canned 32 pounds of ground beef as I needed to clear out my freezer and make room for 90 pounds of beef from a cow my daughter and son-in-law had processed. Still have 30 pounds of leg quarters (I may only can 20 pounds so we can have a bag for a 4th of July cookout), 2 whole chickens and 3 turkey breasts left to cook and can. I left my ground beef plain so I could use it for tacos, spaghetti, etc.

Can I use salsa instead of the seasoning mix? We light flavoring the meat with salsa.

Great! I should do this. I have only canned chicken so far, no other meat by itself. I wonder what my husband would say about me dragging out the canning stuff again? I just got it all put away. He hates having it all over the place! My next house will have a canning kitchen, if just for his sanity. Lol

I am a newbie canner, but really want to can taco meat as we eat tacos once a month and would love to just grab a jar of taco meat to make things easy. My question is that the taco seasoning used in the video has the first ingredient listed as corn meal. Is this ok to can with? I was under the impression that starches were a no no. thanks for your help. Love your videos.
