I wouldn't dream of draining the grease off any meat I cook. Also never buy skimmed milk.

I'm a noob. I put butter in my pan but then my pan is getting dry after a few minutes. The pork mince/ground beef gets a good cooked colour but then when I eat it, it's cold. Help? Please. :)

What? You just open the package then put it in the pan? You dont put those seasoning things like we do for fish or chicken?

According to America’s Test Kitchen, mixing raw ground beef with a little baking soda changes its pH, which in turn makes it harder for its proteins to form a bond as the meat cooks. Without the help of baking soda, proteins in meat are attracted to one another and squeeze out juices as the meat cooks. Baking soda transforms the meat, making it more tender and more moist.

By gently tossing a baking soda solution with the meat (about ¾ teaspoon baking soda to 2 tablespoons water for 2lbs of grind) and letting sit for 15 to 20 minutes before cooking, beef loses less liquid, browns faster and tastes better.
