We have this dish in Iceland as well. It’s called svið and is very similar if not the same as this one. You used to be able to order it at a fast food place until recently.

In iraq we also eat a similar dish called “bacha” its boiled sheep head with boiled sheep legs and sheep broth. 😅

The eyes are good with tortillas and lengua together imo.

The cheeks are very good, but I couldn't eat the eyes. Salty and good viking food! ❤🇳🇴❤
