Breakfast Burrito

Ingredients
- 1 red capsicum (bell pepper), sliced
- 1 white onion, sliced
- 2 large chorizo sausages, diced
- 8 slices crispy bacon
- 4 potatoes, boiled
- 1 tsp cumin
- salt and pepper
- 8 eggs, beaten
- 50ml milk (¼ cup)
- 4 large flour tortillas
- 180g grated cheese (6.3 oz)
- oil for cooking

Method
1. In a large cast-iron pan, add a drizzle of oil, then place the cooked half potatoes and press firmly with a spatula to crush and flatten. Cook for 5-6 minutes until golden brown before flipping and cooking for a further 2-3 minutes. Remove and set aside.
2. While the potatoes are cooking, cook your bacon until it's nice and crispy. Once cooked, set aside.
3. In the same pan, add the diced chorizo and sauté for 1-2 minutes before adding the sliced red capsicum, sliced white onions, and seasoning with salt, pepper, and ground cumin. Cook for 5-6 minutes until the peppers and onions have softened and the chorizo has some colour.
4. Place your eggs in a bowl along with the milk and a pinch of salt. Whisk well, then scramble in a pan with a small knob of butter.
5. To assemble, lay a flour tortilla down and add a couple of spoons of scrambled egg, then the onion and pepper mixture, and finally some grated cheese. Roll tightly before toasting the whole burrito in a pan on all sides until golden.
6. Serve the burrito with some salsa or your favourite hot sauce.

Inspired me to make a Breakfast Burrito this morning. I had a leftover baked potato that I diced into about 1/2-inch pieces and browned in a pan with some olive oil, used American breakfast sausage and then added some really good salsa I get at the grocers. Everything else pretty much just as Andy did it. Had it all on hand, and my wife and I were eating in less than 30 minutes. Great idea! Cheers from Columbus, Ohio!

God bless. When I was in college there was a breakfast place that would make a burrito just like this but they would add maple syrup. So good, truly made me proud to be American

As a Hispanic from CA, that looks fantastic!

Some tips to take it to another level, but they do take a bit more time. A good salsa takes about 5 minutes, you can make it tomato or tomatillo (red or green) based on your liking.
Tortillas for burritos can be a tricky, as I find most store bought flour tortillas don't hold too much filling that well, you can find larger tortillas in some grocery stores, but I can't imagine that's too common worldwide. I recommend making them from scratch, there's lots of good tutorials on YouTube and it honestly doesn't take too much practice or time to get the hang of.
Personally I also love beans, an avocado smear, maybe some sour cream, but that's up to your personal discretion haha!

As someone who was raised in the South and spent my teens and 20s in the Southwest, highly recommend hatch green chile to either smother the burrito in or use inside of it. Life changing.

One thing I hate about most American breakfast burritos is uncooked tortillas. Well done, you even got then a bit crispy. And crispy potatoes. Yum!

Thing I love most about breakfast burritos is there's 1, 000s of ways to make them correctly. My favorite being with bacon and southern style hashbrowns cooked in a cast iron Dutch oven.
