Easy Pineapple Cake

This cake is super moist, light, and perfect for Summer.

Ingredients:
1 box Duncan Hines French vanilla cake mix
1 stick butter, melted
3 large eggs
1 can (15-20 oz.) crushed pineapple with juice
For Cream cheese icing:
1 block (8 oz.) cream cheese, softened
1 stick unsalted butter, softened
3-4 cups powdered sugar
1 ts. vanilla extract or almond extract, optional

1. In a mixer bowl with a paddle attachment, blend cake mix, eggs, and melted butter together until smooth. Then add pineapple with its juice to the can. Mix well until blended.
2. Pour the cake batter into a square pan lined with parchment paper (9"x9") and smooth the top with a spatula.
3. Bake at 350 deg. F. for 45-50 minutes or until a skewer or a knife insert in the middle comes out clean. Let stand for 10 minutes before removing the cake from the pan to a wire rack to cool completely.
4. Make frosting by mixing cream cheese and butter in a mixer bowl with a wire whisk attachment until smooth and fluffy. Add vanilla and powdered sugar (1 cup at a time.) and mix until light and fluffy about 3-5 minutes.
5. Spread the cream cheese icing on top of the cake. Cut into squares and serve.

I made it into a poke cake. I reserved 1/4 c of the pineapple juice and poured it over the holes before frosting it. Super, super moist.

I made this for thanksgiving but in layers and I also put small pieces of pineapples in the icing 👌 Thank you!

The recipe looks very good, and seems easy, but still some accompanying instructions
would make it even better.

Thank you for the simple and great recipe. The cake was very light and moist; Quite delicious. I made a Whipped cream/cream cheese frosting and it complimented the cake quite well.

Use a 15-20 oz. can of crushed pineapple is ok . You may set aside some juice of the 20 oz. can to add later as needed.
