I'll have to make this for my mother in law for Thanksgiving and act like it wore me out. When I was pregnant she would ask for sweet potato pie. I'd go to the store, buy one, swish the top with a fork and put it in the oven to brown it. 😂😂
All of her friends loved that pie. They started requesting it like I felt like baking pies from scratch. Lol

My Momma and I have been making this cake for year's but slightly different.
Instead of water in the cake batter we use Mandarin oranges with a 1/2 cup of the juice and for the icing instead of chunk's of pineapples we use crushed. No need for a mixer.. just stir with a spatula. I make my icing ahead of time and refrigerate. As it gets colder it fluff's on it's on.

That being said.. I do love your video and the cake looked delicious.

Just tried your recipe, my son & I loved it! I was afraid it might be too sweet with the juice added over water but it wasn't. It was perfect! Yummy! About 35 years sho I used to make a yellow mix in a flange pan. Then mix pineapple, cool whip, and (forgot next word) sweetened milk to make the frosting. Topped with nuts and edged with cherries. Let sit for flavor to meld before serving. Everyone loved it. Funny, I never thought of using the juice.

Great pineapple cake! You made it look so easy! I was especially intrigued by the icing: I would never have guessed that you could make icing that way...and not having to use another bowl was a big plus. The worst part of cooking is cleaning up, haha

Why can't I ever think of substituting the juice for the water in cake mixes?? So easy yet really ups your cake game!!! This is so good! Thank you! I also poke a few holes in my cake and pour a little pineapple juice into the cake after baking it and it's so moist and gives you an even stronger pineapple flavor if you really want to taste more of it.
