My mother and I never made a cheesecake before and wanted to try it out. We followed this recipe almost exactly( even the strawbeery sauce). Just wanted to say it came out DELICIOUS! Literally an easy and perfect cheesecake. The only thing we didnt include was the creme fraiche because we didnt have any but we used sour cream instead and it was just fine. The strawberry sauce was my favorite part to make so easy and holy crap it was so delicious! We even made some extra sauce for pancakes :) This recipe is great and literally anyone can make this.

This is almost identical to the recipe I've been using for like 15 years, and the really cool thing about it is that you can super easily easily change the flavor into anything you want by omitting the sugar and replacing it with the sweetened flavoring of your choice, like a sweetened ganache for chocolate, any flavor of fruit coulis you can imagine, pumpkin pie filling, peanut butter, etc.

Another protip is that you can get a chocolate crust by replacing the graham crumbs and sugar with finely crushed oreos.

I’ve made this recipe a couple times and and each time it tasted velvety smooth and delicious. I did notice a couple things to watch out for though. I whisked the cornstarch with other ingredients first to prevent as much clumping as possible. Sour cream or greek yogurt works just fine as a substitute for creme fraiche. But most important of all, foil your pan carefully. If there’s the smallest crack waster and steam will go in and make your crust all soggy. You can seal it with an oven safe bag but be sure take it off once it comes out of the oven because it’ll create a lot of condensation.

So! I made this today. Unfortunately the store I went to didn’t have Crème fraîche so I subbed sour cream for it. Still a great recipe nonetheless. Today was a practice round and I will be making it again on Tuesday. That’s when I will use Crème fraîche. I’ll post an update.

For anyone intimidated by it, don’t be.. it’s a perfect recipe. I used a whisk instead of a hand mixer but my cream cheese had been thoroughly softened at room temp. The custard is smooth as heck and is so delicious. It’s not too sweet and still has a cheesy bite. Very delicious. My family fell in love with it and is requesting it for the holidays now.

Just a note when it comes to cheesecake, be patient. If you pull it out of the oven immediately there is supposedly to be a bit of a wobble in the middle since it is still cooking while it cools. You didn’t under bake your cake! Follow the cooking directions exactly and you’ll be fine.

Once cooled and set in the fridge, the result is a smooth delicious cake! I high recommend this recipe.

A few tips to share that can simplify and foolproof your cheesecake:

1. I make mine WITHOUT a water bath because of the hassle and risk of water running into our springform a few times. To bake a cheesecake without a water bath AND prevent cracking, make sure all your ingredients are at room temperature, especially the cream cheese. When all ingredients are room temp, you can bake the cheesecake in the oven just like that. 175C for about 1hr or until it's slightly jiggly in the middle.
2. My recipe consist of creamcheese, sugar, eggs, vanilla and sprinkle of salt. Even without creme fraiche, sour cream, or heavy cream, it can still taste really delicious and always turn out perfect! Give it a go!
3. Make sure to mix your batter thoroughly and constantly scraping the sides to avoid lumps.

I've made this cheesecake three times already. People love it and want me to keep making it. I made it with sour cream the first time (couldn't find the creme fraiche) and made it with the creme two times after. Can't wait to try frying it 👌
