Pork Adobo

3 lbs pork butt, cut into 1 1/2 to 2 inch cubes
1 Large sweet onion
6 cloves of garlic (divided)
3/4 cup soy sauce
1/2 cup white vinegar
2 bay leaves
1/2 tsp salt
1/2 tsp pepper
1 tsp peppercorns
1 Tbsp olive oil

Slice the onion and place in the bottom of the slow cooker with 3
cloves of minced garlic and 1 bay leaf. Add olive oil to a frying
pan on medium-high heat, once it starts to shimmer add pork and
sear on all sides. Add pork to the slow cooker. In a small bowl
combine salt, pepper, 3 cloves garlic, soy sauce and vinegar. Mix
and pour over pork. Throw in the 2nd bay leaf and the peppercorns
and cover. Cook on high for 4 hours. Serve over white
rice
