I absolutely LOVE the owner, he brought the fun and at the same time he left Dave to do the review. I hate when they linger. This guy is cool AF, I would definitely get a Pizza there

Low moisture mozzarella is more New York style whereas fresh mozzarella is more an Italian thing. Low moisture helps keep the crust crispy. Also, if the pie is too paper thin, it may not be sturdy enough to hold the sauce and cheese together without flopping. That’s what happened here, because clearly the crust was black on the bottom yet still flopped.

I had two slices here a few days ago. One square with burrata, and one regular square. The pizza was very good, and the owner is very friendly. I definitely recommend it.

If I was a pizza shop owner, you know a regular cheese thin pie well-done would be called the Portnoy. No frilly gimmicks, no weird cheese sauce or addings just straight up real-deal pizza cheese cooked thin and well-done just the way Dave likes it. It's fine though I'm not a Pizzeria owner and never will be.
