good for her asking "what can we do better" and her response to Dave was spot on, make it Dave's way or make it to please the local customers. She's making the right choice.

To be fair she's not wrong, if I crisped up all my pizzas the way Dave likes them I'd get calls every day about "burnt pizza"

Probably the hardest I've laughed out loud on a Barstool pizza review when camera zoomed in on the Owner behind Dave with the door cracked taking notes.. 🤣 🤣

Long islander here and I'll say LI pizza has two major issues most of the time - lack of consistency (Even from the same place, the pizza can differ wildly with each order) and a tendency to be a little undercooked, because they were either rushing to get it out (especially if it's not delivery) or didn't want to risk burning it.

Dave was very fair. And she took it fairly well.

Long Island pizza is more doughy with plenty of cheese and cooked in a metal oven. Everyone does it that way, which is why it’s mostly similar.

The places in CT, parts of Westchester, and North Jersey have century old brick ovens and the style is completely different (more up Dave’s ally).

I’m from Long Island and saw the downfall of the cheese pizza start in the late 90s. The specialty slice craze began and many pizzerias started to focus on slices like chicken Marsala, buffalo chicken, penne alla vodka, etc. They could charge double/triple for those slices and the traditional cheese was left behind.  

Some places still take pride in the Sicilian & Grandma slices. But the traditional cheese was left behind. Dave is correct. We now are left with a bunch of low 7s pizza. Greed destroyed Long Island pizza. Sad state of affairs now.

As a Detroit style guy, I feel this lady.
I'm not sure when we decided Dave's slightly burned saltine cracker pizza was the litmus test, but here we are. Everybody knows the rules.
