Café Cubano expert here:

Your espresso and sugar mixture is overly thin. You'll get better espuma with just a few drops of espresso when whipping the sugar, count to 1 from the time you pour into the sugar and that's it. You really want that espuma to stand out and last a long time, just be ready to put in some elbow and wrist grease:)

That is NOT espumita... you added way too much coffee to the sugar. It's supposed to be thick, not watery
