If I'm not mistaken, Alton Brown's "hack" was to use a mini-muffin tin that was slightly smaller than the meatball so the meatball sort of just rests above the bottom...? I remember watching it in an episode of Good Eats...

I feel like all those garlic hacks are way more time consuming/difficult/dirty dish producing than whacking the cloves with a knife like most normal people do. :P

Alton Brown uses a muffin tin, not an egg carton. He uses egg cartons to store condiments.

So, I think the hack with the oil was geared towards pasta that will be leftover. However, what we do at the restaurant where I work is we just toss the cooked noodles into boiling water for about a minute and then drain and serve with sauce. Works great 👍 (Also, please don't yell at me, we are a busy American pizza place and not by any means a traditional Italian restaurant.)

Apparently adding salt to your water before boiling is not going to make it take longer to boil. What adding salt to water does is raise the boiling point and lower the specific heat. But that doesn't really matter, because the amount of salt you add to your water is so little, that the difference one way or the other is going to come down to seconds. No idea about the pitting stainless steel pots though.

another tip, oil doesnt really keep the sauce from sticking to the pasta as most sauces contain pasta even home made, but it keeps the noddles from sticking to each other very nicely
