Ingredients/Recipe

Oat Base:
• 1 ½ cups rolled oats
• ½ cup peanut butter (natural, unsweetened)
• ¼ cup honey or maple syrup
• 1 tsp vanilla extract
• ¼ tsp sea salt
Date Caramel Filling:
• 1 cup dates (pitted and soaked in warm water for 10 minutes)
• 2 tbsp peanut butter
• 3 tbsp coconut milk (or almond milk)
• ½ tsp cinnamon
• ½ tsp nutmeg
Chocolate Topping:
• ½ cup dark chocolate chips
• 1 tsp coconut oil
Instructions
1. Make the Oat Base:
• Blend 1 cup of oats into oat flour (or use pre-made oat flour).
• In a bowl, mix oat flour, remaining ½ cup oats, peanut butter, honey, vanilla, and salt. Stir until it forms a dough.
• Press into muffin cups or a lined muffin tin.
2. Prepare the Date Caramel:
• Blend soaked dates, peanut butter, coconut milk, cinnamon, and nutmeg until smooth.
• Spread a spoonful over the oat base.
3. Melt the Chocolate:
• Heat chocolate chips and coconut oil in the microwave in 20-second intervals until smooth.
• Pour over the date caramel layer.
4. Chill & Set:
• Freeze for about 1 hour until firm.
5. Enjoy! Pop them out and store in the fridge for a chewy, sweet, and satisfying treat!
